Ken Mullock and fellow students celebrates Nutrition Month with a program for faculty

We spoke with Ken Mullock and a group of students at University of Saskatchewan, to find out what they are planning for March.

DC: What are you planning for Nutrition Month, Ken?

Ken: Right now, I’m taking a Program Planning and Evaluation class and our professor includes Nutrition Month planning as part of the curriculum. I’m working in a small group with my fellow students and our target audience is staff and faculty members. Our first step was to complete a situational assessment and develop a survey to find out what staff and faculty are most interested to learn during Nutrition Month. Through the survey we found out that staff and faculty are not aware of the campus resources and employee benefits available to them. They are also interested to know about places to eat on campus that offer healthy eating options and get some quick and easy meal preparation tips.
 
We’re using this information to plan two initiatives. One will be a cooking class in our university’s Food Lab where staff and faculty can learn about meal preparation tips like how to re-purpose leftovers.
 
Our second initiative is to develop a short series of key messages that will be included in the existing e-newsletter that faculty and staff receive. For example, we’ll promote the various places on campus that offer healthy food options and offer tips to encourage more meal preparation at home and cooking together as a family.


DC: Do you have any advice for dietitians as they plan their Nutrition Month activities?

Ken: Nutrition Month is an ideal time to get involved in your school community. Ask yourself, “Where is there a need?” “Are there assets I can draw upon?” Involve your professors and fellow students to create your own Nutrition Month initiative.
